Maple Peanut Brittle

Ingredients:
- Nonstick cooking spray
- 2 cups sugar
- 1/2 cup maple syrup
- 6 tablespoons unsalted butter (cubed)
- 1/2 teaspoon baking soda - 1 1/2 cups roasted salted peanuts

1. Line a rimmed baking sheet with foil and grease with nonstick cooking spray.
2. Stir together the sugar, corn syrup and 1/2 cup water in a medium saucepan fitted with a candy/deep-fry thermometer. Bring the mixture to a boil over medium heat, then continue to boil until it's golden brown and it reaches 340 degrees F, about 15 minutes.
3. Working quickly, remove the pan from the heat and stir in the butter and baking soda until smooth (it will foam and bubble up). Stir in the peanuts until evenly distributed amongst the sugar mixture.
4. Pour onto the prepared baking sheet and quickly smooth with a rubber spatula into a thin and even layer. Let harden uncovered at room temperature until cooled completely. Break into pieces and store in an airtight container.

- 1 teaspoon cinnamon
- ½ cup (about 5 scoops) protein powder
- ½ cup raw almonds (you can also just use more pecans)

1. Soak the dates in hot water for about 10 minutes.
2. Add the dates to a food processor or high-powered blender and blend until they’re broken up. Add the cinnamon and protein powder and blend to incorporate.
3. Add the almonds and pecans and pulse until combined. There should be small bits of nuts remaining. Be careful not to over-process or it will get sticky or greasy.
4. Press the dough into a small pan lined with parchment paper, or just place the date dough on the parchment paper and press into a square/rectangular shape, then use a rolling pin or glass bottle to flatten the top.
5. Cut into squares or bars (approximately 8 bars).
6. Store in a sealed bag or small lidded container in the fridge for up to a month, or in the freezer for longer term storage.

- Butter: Butter adds moisture and flavor, and creates a tender crumb. Use room temperature butter.

Direction:

3. Cream the butter and sugar together. Add the egg whites, sour cream, and extracts.
4. Combine the wet and dry ingredients together.
5. Pour in the milk. Mix just until combined– the batter will be slightly thick.
6. Bake. These cakes take about 21-23 minutes in the oven.
7. Let the cakes cool completely.
8. Make the cream cheese frosting.
9. Assemble and decorate the cake.
10. Refrigerate. Place the cake in the refrigerator for at least 30-45 minutes before slicing. This helps the cake keep its shape when cutting.
