Loin cuts come from the area between the neck and rear legs. This makes for a very lean cut and soft to the bite texture. We use this cut of meat to make our pork jerky. Pork loin cut into sticks. Smoked for 6 hours. Ingredients: Pork, seasonings, spices and flavors. (Family recipe since 1963)
