Baked Apricots with Walnuts

Ingredients:
- 225 gr / 8 oz dried Turkish apricots
- 3 fl oz / ⅓ cup water – if needed -
- 30ml/2 tablespoons butter
- 30ml/2 tablespoons brown sugar

For the filling:
- 75 gr /1/2 cup crushed walnuts into small pieces
- 50 gr / ¼ cup brown sugar
- ½ cup water for baking
- Crushed pistachio nuts for garnish

1. Preheat oven to 180 C/ 350 F
2. Soak the dried apricots in warm water for 10 minutes, if they are really hard. Then drain the water. If they are already soft enough to split open, you can skip this stage.
3. Combine the crushed walnuts and brown sugar in a small bowl as the filling.
4. Split open the apricots with a small knife, making sure one end is still intact.
5. Stuff each apricot with a teaspoonful of crushed walnuts and brown sugar mixture and slightly close it up.
6. Grease a baking tray with olive oil or butter and place the stuffed dried apricots on it.
7. Pour the water over the tray.
8. Place a tiny little dab of butter on the top of the each stuffed apricot.
9. Sprinkle 2 tablespoons of brown sugar over the apricots and bake in the oven for 25 minutes.
10. Arrange them in a serving dish and sprinkle over some crushed pistachio nuts.

Old-Fashion Peach Cobbler

Instructions:
1. Add the sliced peaches to a saucepan. Cook and stir on medium heat for just a few minutes to bring out some juice from the peaches. Remove from heat and set aside.
2. Preheat oven to 350 degrees F. Slice butter into pieces and add to a 9×13 inch baking dish. Place the pan in the oven while it preheats, to allow the butter to melt. Once melted, remove the pan from the oven.
3. In a large bowl mix together flour, sugar, baking powder, and salt. Stir in milk, just until combined. Pour the mixture into the pan, over the melted butter and smooth it into an even layer.
4. Spoon the peaches and juice over the batter. Sprinkle cinnamon generously over the top.
5. Bake at 350 degrees for about 40 minutes. Serve warm, with a scoop of ice cream, if desired.

Pear Cobbler

Ingredients:
Biscuits:
- 1 cup all purpose flour
- 2/3 cup stone-ground cornmeal (medium grind)
- 1/4 cup plus 3 tablespoons sugar, divided
- 2 teaspoons baking powder
- 1/2 teaspoon coarse kosher salt
- 6 tablespoons (3/4 stick) chilled unsalted butter, cut into 1/2-inch cubes, plus 3 tablespoons unsalted butter, melted
- 2/3 cup chilled heavy whipping cream

Pear filling: - 6 pounds firm but ripe Seckel pears, Taylor Gold pears, or Bosc pears, peeled, cored, cut into 1/2- to 3/4-inch pieces (about 12 cups)
- 1 cup apple juice
- 1/4 cup fresh lemon juice
- 3 tablespoons cornstarch
- 1 teaspoon (scant) coarse kosher salt
- 1/2 teaspoon freshly grated nutmeg
- 2 tablespoons (1/4 stick) chilled unsalted butter, diced
- 1 1/2 cups dried wild blueberries (9 ounces)
- Vanilla ice cream

Preparation:
For biscuits:
Whisk flour, cornmeal, 1/4 cup sugar, baking powder, and 1/2 teaspoon coarse salt in large bowl. Add chilled butter; rub in with fingertips until mixture resembles coarse meal. Add cream; stir just until moistened. Gather dough together; form into 8-inch-long log. Cut log crosswise into eight 1-inch-thick rounds. Spread 3 tablespoons sugar on plate. Dip 1 cut side of each biscuit into melted butter, then dip buttered side in sugar. Place biscuits, sugared side up, on platter; sprinkle any remaining sugar over top. Cover and chill.

For pear filling:
Preheat oven to 375°F. Butter 13x9x2-inch glass baking dish. Place pears in large bowl. Add next 5 ingredients; toss. Let stand 10 minutes, tossing occasionally. Transfer pear filling to prepared dish. Dot with diced butter. Cover dish with foil. Bake until pears are almost tender, about 50 minutes. Remove dish from oven; stir dried blueberries into pear filling. Place biscuits atop filling. Continue to bake uncovered until filling is bubbling thickly, biscuits are pale golden, and tester inserted into biscuits comes out clean, about 35 minutes longer (biscuits may look cracked). Cool 30 minutes. Serve warm with ice cream.

Banana Chips, Papaya and Apple Rings

I am a big banana chip fan and can say that they are very easily done wrong. In most cases they are either over done and taste almost burnt or under done and still soft. And in the event that I find a brand that does it right there is a good chance the on the next bag they were made long enough ago that they have gotten moister from the air and now they are chewy. But I have gotten them from Bulk a few times now and they have been perfect every time. In fact on my last order I made I got 4 bags and found out that was not enough for the month lol. Very sad to see the red line through the banana chips and can not wait to be able to order some more! As for the papaya, this is the only the second time that I have ever bought papaya. The first time was with Bulk last month and liked them so much I bought 3 pounds this months. I don't have a reference from other brands on papaya but can so Bulk has done it right!!! And as for the apple rings as long as you use the right apples it is hard to mess up. That being said I still find a lot of places using cheap bland apples that end up tasting like you are chewing on nothing. And sometimes I've even had overly sweet apple rings that taste almost like candy. I do not know if they are using really sweet apples or if they are adding sugar when this happens but it is not for me. I am very happy with Bulks apple rings and will be buying them in bulk when the holidays come up. I usually put them in my apple cider with a little cinnamon on top. Most will use fresh apple slices in there but I have found that dehydrated apple rings just hit a little bit different. If you've never tried it I do highly recommend it. Hope this has help!!

I don't need dried foods for backpacking or gourmet cooking but I love having it around when the fresh fruit supply runs out. It's better than candy and the Bulk Dried Fruits are good quality. I stock up on sales and share with my daughter.
