Candied Almonds

Ingredients:
- 1/2 cup of water - 1 cup of white sugar - 1 Tablespoon of ground cinnamon - 2 cups of whole almonds
Directions:
Bring water, sugar, and cinnamon to a boil over medium heat in a saucepan. Add almonds. Stir the mix until the liquid evaporates and leaves a syrup-like coating on the almonds. Pour the almonds onto a baking sheet lined with waxed paper. Separate almonds using forks. Allow to cool about 15 minutes.

Rosemary and Olive Oil Roasted Cashews

Ingredients:
- 2 cups raw cashews
- 1 tablespoon extra virgin olive oil
- 1 tablespoon fresh rosemary, finely chopped
- 1/2 teaspoon freshly cracked black pepper

1. Heat oven to 350F.
2. In a medium bowl: Add cashews, olive oil, fresh rosemary, and black pepper. Toss to combine.
3. Spread cashews onto a baking sheet lined with parchment.
4. Roast 15 minutes, stirring every 5 minutes.
5. Remove from the oven and cool before handling.

Gluten Free Pecan Protein Bar

Ingredients:
- 1 cup raw pecans
- 1 cup dates pitted (about 10-12)
- 1 teaspoon cinnamon
- ½ cup (about 5 scoops) protein powder
- ½ cup raw almonds (you can also just use more pecans)

1. Soak the dates in hot water for about 10 minutes.
2. Add the dates to a food processor or high-powered blender and blend until they’re broken up. Add the cinnamon and protein powder and blend to incorporate.
3. Add the almonds and pecans and pulse until combined. There should be small bits of nuts remaining. Be careful not to over-process or it will get sticky or greasy.
4. Press the dough into a small pan lined with parchment paper, or just place the date dough on the parchment paper and press into a square/rectangular shape, then use a rolling pin or glass bottle to flatten the top.
5. Cut into squares or bars (approximately 8 bars).
6. Store in a sealed bag or small lidded container in the fridge for up to a month, or in the freezer for longer term storage.

Walnut & Blueberry Crunch Breakfast Bake

Ingredients:
- 1 cup chopped walnuts
- 1 loaf (16 ounces) day-old French bread, cut into 1-inch slices
- 8 large eggs
- 1 cup half-and-half cream
- 1/2 teaspoon vanilla extract
- 1 cup old-fashioned oats
- 1 cup packed brown sugar
- 1/4 cup all-purpose flour
- 1/2 cup cold butter
- 2 cups blueberries

Directions: 1. Arrange half of the bread slices in a greased 13x9-in. baking dish.
2. In a large bowl, whisk the eggs, cream and vanilla. Slowly pour half of the cream mixture over the bread. Top with remaining bread and egg mixture. Let stand until liquid is absorbed, about 5 minutes.
3. Meanwhile, in a small bowl, combine the oats, brown sugar and flour; cut in butter until crumbly. Sprinkle over top. Top with blueberries and walnuts.
4. Bake, uncovered, at 375° until a knife inserted in the center comes out clean, 30-35 minutes. Let stand for 5 minutes before serving.

Pistachio Cake

Ingredients:
- Pistachios: Instead of relying on artificial pistachio flavor, take pistachios and grind them into a crumb.
- Cake Flour:
- Baking Powder & Baking Soda: Use both leaveners to help the cake rise.
- Salt
- Butter: Butter adds moisture and flavor, and creates a tender crumb. Use room temperature butter.
- Sugar
- Egg Whites
- Sour Cream & Milk: Both keep the cake ultra moist.
- Vanilla & Almond Extracts: Use both pure vanilla extract and almond extract for an outstanding flavor.
- Milk

Direction:
1. Make pistachio crumbs. Use your food processor to break down the nuts. The goal is a super fine pistachio crumb. If you go too far, you’ll end up with pistachio butter. Add a little honey; it’s delicious on toast. But not what we want in our pistachio cake.
2. Combine the dry ingredients together. Include 1 and 1/2 cups of pistachio crumbs.
3. Cream the butter and sugar together. Add the egg whites, sour cream, and extracts.
4. Combine the wet and dry ingredients together.
5. Pour in the milk. Mix just until combined– the batter will be slightly thick.
6. Bake. These cakes take about 21-23 minutes in the oven.
7. Let the cakes cool completely.
8. Make the cream cheese frosting.
9. Assemble and decorate the cake.
10. Refrigerate. Place the cake in the refrigerator for at least 30-45 minutes before slicing. This helps the cake keep its shape when cutting.
11. Serve!
